Abstract
ANY means of binding tannins (flavolans), the higher-molecular-weight polyphenols, is considered an important extraction aid in isolating enzymes from plants containing tannins. Tannins precipitate protein and exhibit inactivation of enzyme activity in plant tissues on homogenization. This inhibition has been attributed to astringent tannin polymers1.
