Interaction of Starch with Iodine

Abstract

THE investigation recorded here is a theoretical re-examination of the potentiometric estimation of iodine affinity to starch fractions1,2. Our approach is a slight modification of that developed by Klotz3 in his work on binding of salts to proteins, as simplified by Tanford4.
