Carcinogenicity of Preheated Fats

Abstract

ROFFO1 claimed to induce gastric adenocarcinoma in rats after feeding fats preheated to 350° C for 30 min. However, several authors2–4 repeating Roffo's experiments have failed to find glandular tumours in the stomach. Later, British investigators have examined the possible carcinogenic action of preheated cottonseed oil per os in mice and hamsters, but again without success5. In view of the repeated failure of the experiments when giving the fat orally, we attempted to induce glandular neoplasms by injecting fat—preheated to 360°–365° C for 30 min—into the stomach wall of the guinea pig, a rodent with a purely glandular stomach. The series reported here is an extension of a preliminary observation reported previously6.
