Abstract
WILLSTÄTTER and co-workers1 have shown that if glucose is added to a suspension of yeast cells, it disappears from solution and is built up into a polysaccharide (glycogen), inside the yeast cells. Only after this (in about ten minutes time) does the fermentation begin, as tested by the production of carbon dioxide.
