Heat Denaturation of Proteins as a Chain Reaction

Abstract

BLOOD coagulation, which is a special case of protein denaturation, has been found to be a chain reaction by which a new reacting substance is formed1. By the action of heat on a mono-disperse system of highly purified serum-globulin in a salt solution, a similar reaction was found to take place. The denaturation process was followed by means of nephelometric measurements with a Pulfrich photometer. The denaturation was limited to a time of exposure to heat (waterbath at 70° C.) by which the coagulated denatured particles of proteins are assumed to remain practically of the same size2. It could therefore be assumed that the nephelometric values expressed the real amounts of proteins denaturated.
