Propapain and its Conversion to Papain: A New Type of Zymogen Activation Mechanism involving Intramolecular Thiol-Disulphide Interchange

Abstract

Propapain, a thiol-containing but catalytically inactive protein present in dried papaya latex, seems to be a structural isomer of papain that can be transformed to papain by intramolecular thiol-disulphide interchange.
