Role of Phytic Acid in Potato Tuber


IN a previous paper1 it was assumed that phytic acid and starch act as a phosphorus reservoir in the potato tuber. The deposition of phytic as well as starch phosphorus lowers the level of inorganic phosphorus and restrains the metabolic activity of the tuber. It was decided to verify this supposition in further material.
