Fats are lipid small molecules generated by esterification between fatty acids and glycerol to generate a triglyceride. Fats are soluble in organic solvents, but insoluble in water. They can be either solid or liquid, though references to fats generally imply the solid unsaturated forms, containing carbon double bonds, rather than unsaturated forms.
