Liquids fold according to density-viscosity ratio
New theory sheds light on plate tectonics and pancake batter.
A French physicist has solved a long-standing cooking conundrum. Poured cake mix forms a thin sheet and folds over when it hits the bowl because of its density-to-viscosity ratio, concludes Neil Ribe of the Institute of Global Physics in Paris1.
