The ABCs of low-phytate crops

Adequate dietary phosphorus is essential for human health and optimal livestock production. Although cereal and legume seeds contain plenty of phosphorus, most is in the form of phytic acid (inositol hexaphosphate), which nonruminants cannot digest efficiently.
