From its beginning, Nestlé has been building the science and technologies to resolve diseases related to poor nutrition. Nutrient deficiencies, epidemic in the 19th Century took much of the 20th century to comprehend. Now the world is faced with a new set of scientific challenges. Unbalanced diets are contributing to an epidemic of metabolic disorders. In response, many of the 670 scientists from 45 nations located at the Nestlé Research Center in Lausanne, Switzerland are focusing their research on the role of foods in metabolism. Foods are ensembles of biomolecules forming complex structures across the molecular, colloidal and macroscopic length scales. These compositions and structures, during passage, digestion and absorption through the intestine, alter the physiological, hormonal and metabolic status of individuals consuming them.
