Sucrose Crystallization

Abstract

PREVIOUS reports1,2 described how static films of aqueous sucrose solution may be evaporated under controlled vapour pressure in humidators3, facilitating examination of nucleation and crystal growth throughout the whole range of supersaturation (SS). In these circumstances, when nucleation occurred at the higher concentrations, that is, more than 3.0 SS (ref. 2), spherulitic multicrystals were found to be the normal form. In many cases they closely resembled polymer crystal forms.
